Usage:
- Prepare sambhariyu with 1 medium fresh coconut. 1 bunch fresh coriander, 100gm fresh garlic, 5 to 10 green chilies, 50 gm fresh ginger, 10 to 15 gm fresh amba haldi. Hathi Chili Powder. Hathi Coriander Power, Hathi undhiya Masala, ½ tbsp. soda bicarbonate, sugar/salt to taste. In a heavy bottomed vessel, put 2 cups oil, add 1 giass of water. Make the first layer of brinjals, potatoes. Yam (Suran/kandh) and sweet potato, Sprinkle some sambhariyu on top, Now add remaining vegetables and add sambhariyu, put the vessel on medium heat for about 10-15 minutes, Once the vegetables start cooking, add the muthias to vegetable while keeping on simmer, allow to cook for about ½ hour can low flame, You are ready to serve the undhiya with hot puris.
